Pandi Curry

Ingredients:

Pork with skin 500gms medium cut
Onion - 1 cup
Tomato - 1 medium size
Oil - 1-2 tablespoon
Ginger garlic paste - 1 tablespoon
Salt - as required

Spices:
Turmeric powder 1/2 teaspoon
Chilli powder 1tsp
Cumin powder 1/2 teaspoon
Pepper powder 1 teaspoon
Dhaniya (Coriander seeds) powder 1 tsp

Easy Method:

Heat a pan and dry roast all the spice powders till it gives a nice aroma. Ensure that spices don't get burnt, 30 secs should be enough.

Take a big pan or appropriate size for curry. Pour oil and heat. Saute onions till they become soft, then goes ginger garlic paste for about 30 seconds. Add finely chopped tomatoes and let it cook for few mins till tomatoes become squishy. Add pork, followed by spices - mix them all together. Add Salt and water (1 or 2 cups depending on how much/thicker gravy you want). Cook on medium flame until pork is done - should be ideally 20-30 mins.
